Vegetable Soup(Heart Smart)
Vegetable Soup(Heart Smart) is an impressive dinner. Made with 1 tbsp. vegetable oil, 1/2 c. chopped onion, 2 garlic cloves, minced, 1 (16 oz.) can tomatoes in juice, chopped and 1 c. low sodium chicken broth, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.
In medium saucepan over medium-high heat in hot oil, cook onion and garlic about 3 minutes or until soft, stirring frequently.
Add tomatoes in juice, chicken broth, carrots, celery, parsley, basil, salt and pepper and bring to a boil. Reduce heat; cover.
Simmer about 20 minutes.
Add lima beans and water; bring to a boil.
Reduce heat.
Cover.
Simmer about 20 minutes or until beans are tender.
Makes 6 servings, about 3/4 cup each.
