Vegetable Salad
Vegetable Salad is an moderately easy dinner. Made with 1 pkg. lemon jello, 2/3 c. sugar, 2 tbsp. vinegar, 2 c. finely grated cabbage and 1/4 c. grated carrot, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.

In a large mixing bowl, dissolve jello in 1 cup hot water and add sugar and vinegar.
Cool to room temperature and add remaining ingredients.
Pour into mold, stirring occasionally to prevent vegetables coming to top.
(I have substituted evaporated skim milk for the cream to lower the fat content.)
