Vegetable Rice
Vegetable Rice is an moderately easy dinner. Made with 1/4 c. chopped onion, 3 tbsp. butter, 1 1/2 c. sliced mushrooms, 2 c. chopped broccoli and 1 c. chopped tomato, this recipe delivers authentic, satisfying flavors. Simple to make and full of bold, satisfying flavors.

Saute onion in butter in skillet until golden brown.
Add mushrooms, broccoli and tomato.
Cook for 4 minutes, stirring frequently.
Add water and bouillon cubes.
Bring to a boil.
Stir in rice, salt and oregano.
Cook, covered, over low heat for 20 minutes or until water is absorbed.
Mix in cheese.
Serve hot or cold.
