Vegetable Relish
Vegetable Relish is an moderately easy dinner. Made with 4 c. ground onions, 4 c. ground cabbage, 4 c. ground green tomatoes, 12 green bell peppers and 6 red bell peppers, this recipe delivers authentic, satisfying flavors. Simple to make and full of bold, satisfying flavors.

Grind or chop vegetables (I use food processor).
Sprinkle with salt.
Let stand overnight or 6 to 8 hours.
Drain and rinse well with cold water.
Drain well, then combine sugar, water, vinegar and spices.
Pour over vegetables.
Heat to boiling and boil for 3 minutes.
Seal in jars.
Process in hot water bath for 5 minutes after water begins to boil.
