Vegetable Potato Soup
Vegetable Potato Soup is an moderately easy soup you can prepare in about 1 hour 26 minutes. Made with c. beef stock, (15 oz.) can mixed vegetables, drained, (16 oz.) can whole white potatoes, drained and diced, medium onion, chopped and bacon, sliced, this recipe delivers authentic, satisfying flavors. Saute bacon until light brown and crisp.
Drain and set aside. Saute onion in drippings until golden.
Combine stock, onion and bacon in soup kettle.
Add vegetables and potatoes.
