Vegetable Melts is an moderately easy dinner. Made with 1/2 c. thinly sliced cucumbers, 1/4 c. shredded carrots, 2 tbsp. oil-free italian dressing, 1/4 c. (1 oz.) fat-free shredded mozzarella cheese and 2 english muffins, split and toasted, this recipe delivers authentic, satisfying flavors. A classic recipe that has been enjoyed for generations.

Combine first 4 ingredients; set aside.
Sprinkle with cheese over English muffin halves.
