Vegetable Medley
Vegetable Medley is an moderately easy dinner. Made with 1 (16 oz.) pkg. broccoli, carrots and cauliflower, drained, reserving liquid, 6 tbsp. reserved liquid or water, 1 can mushroom soup, 3/4 c. shredded cheddar cheese and 1/3 c. lite sour cream, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.

Combine vegetables, soup, 1/2 cup of the shredded cheese, sour cream, pepper, onion powder, reserved liquid and 1/2 can of the onion rings.
Pour into casserole dish and bake at 350Β° for 30 minutes.
Top with remaining onion rings and cheese and bake for 5 minutes longer.
