Vegetable Kugel
Vegetable Kugel is an moderately easy dinner. Made with 6 tbsp. melted margarine, 1 c. chopped onion, 1/2 c. chopped celery, 1/2 c. grated raw carrot and 2 (10 oz.) pkg. chopped spinach, this recipe delivers authentic, satisfying flavors. Bursting with flavor in every bite.

Saute onion, celery and carrot in oil for about 10 minutes, stirring occasionally.
Cook spinach and drain.
Combine vegetables.
Add eggs, salt, pepper, melted margarine and matzo meal.
Spoon into greased 1 1/2-quart baking dish.
Bake at 350Β° for about 45 minutes or until firm.
