Vegetable Antipasto
Vegetable Antipasto is an moderately easy dinner. Made with 9 c. assorted vegetables, 3 cloves garlic, minced, 1/2 c. mazola corn oil, 1/2 c. cider vinegar and 1/2 c. water, this recipe delivers authentic, satisfying flavors. Bursting with flavor in every bite.

In large skillet, combine all ingredients except olives. Bring to boil.
Reduce heat, cover and simmer 5 minutes or until vegetables are tender-crisp.
Cool slightly.
Add olives. Transfer mixture to a bowl or storage container.
Cover.
Chill 6 hours or overnight.
