Vanilla Wafer Fruitcake
Vanilla Wafer Fruitcake is an moderately easy dinner. Made with 13 oz. bag vanilla wafers, crushed, 2 c. pecans, chopped, 1/2 lb. cherries (candied), 1/2 lb. pineapple (candied) and 5 oz. white raisins, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.
Place crushed vanilla wafers in large bowl.
Add chopped cherries, pineapple, pecans and raisins.
Mix well using hands. Beat eggs, sugar, milk and salt together.
Pour over fruit.
Mix well with hands.
Place in greased tube pan and press down with hand.
Wet hand before pressing, it will not stick to cake.
Bake 1 hour at 325Β°.
Cool 15 minutes before removing.
