Vanilla Wafer Cake
Vanilla Wafer Cake is an moderately easy dinner. Made with 2 sticks (1/2 lb.) butter (do not substitute margarine), 2 c. granulated sugar, 6 eggs, 1/2 c. milk and 1 (12 oz.) box vanilla wafers, crushed, this recipe delivers authentic, satisfying flavors. Perfect for family dinners and special occasions.
Cream butter and sugar together until light and fluffy.
Add eggs, one at a time, beating well after each addition.
Add crushed wafers alternately with milk.
Add coconut and pecans and mix well.
Pour into a 12-cup greased tube pan or a fluted pan sprayed with plenty of nonstick spray. Bake in a preheated 300Β° oven for 1 hour and 45 minutes.
Cool completely before removing from pan.
This cake freezes well.
