Vanilla Refrigerator Cookies
Vanilla Refrigerator Cookies is an moderately easy dinner. Made with 1/2 c. shortening, 1 c. sugar, 1 egg, beaten, 1/2 tsp. salt and 1 tsp. vanilla, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.

Cream the shortening.
(I use white Crisco because they hold their shape better.)
Gradually add sugar; continue creaming until mixture is light and fluffy.
Add egg and vanilla.
Mix well.
Sift together flour, baking soda and salt and gradually add to mixture. Add nuts.
Mix well and shape into roll about 1 3/4 inches in diameter.
Wrap in waxed paper.
Chill in refrigerator.
Slice in 1/8-inch thick slices.
Bake on cookie sheet in a 375Β° oven for 7 to 10 minutes.
Cool on cooling rack.
