Twice Cooked Corn
Twice Cooked Corn is an moderately easy dinner. Made with 8 ears corn, 2 qt. water, 1 c. milk, 2 tsp. sugar and 1 stick unsalted butter, melted, this recipe delivers authentic, satisfying flavors. A comforting dish that warms the soul.
Husk corn and set aside.
Into a large pan or pot, pour the water, milk and sugar; bring to a boil.
Now add the corn and cook for 3 minutes.
Drain corn, roll in melted butter and sprinkle with the chili powder.
(At this point, the corn can be left covered in the refrigerator for 2 to 3 hours.)
Right before serving, cook on grill, directly over hot coals, for 2 minutes on each side.
Serves 8.
