Twice Baked Sweet Potatoes
Twice Baked Sweet Potatoes is an moderately easy dinner. Made with 6 large sweet potatoes, baked, 1/4 c. parkay margarine, melted, 1/2 tsp. cinnamon, 1/2 tsp. salt and 1/4 tsp. ground nutmeg, this recipe delivers authentic, satisfying flavors. A classic recipe that has been enjoyed for generations.

Preheat oven to 350Β°.
Cut each potatoes in half lengthwise. Scoop out centers, leaving 1/8-inch shell.
Mix potatoes, 2 tablespoons margarine, cinnamon, salt and nutmeg with an electric mixer until smooth.
Stir in 2 cups marshmallows, pineapple and 1/2 cup marshmallows and walnuts; spoon into shells.
Toss remaining margarine, marshmallows and walnuts; sprinkle on top of potatoes. Bake 20 minutes.
Makes 12 servings.
