Twice-Baked Squash
Twice-Baked Squash is an moderately easy dinner. Made with 4 medium acorn squash, 2 1/2 c. chopped, cooked spinach or 2 (10 oz.) pkg. frozen chopped spinach, thawed and well drained, 2/3 c. grated parmesan or romano cheese, 6 slices bacon, crisp-cooked, drained and crumbled and 6 tbsp. butter or margarine, softened, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.
Line a large baking pan with foil. Halve squash lengthwise.
Remove seeds.
Place squash, cut side down, in pan.
Bake at 350Β° for 30 minutes.
Turn cut side up. Bake, covered, 20 to 25 minutes or until nearly tender.
