Tortilla-Chicken Casserole
Tortilla-Chicken Casserole is an moderately easy dinner. Made with 4 chicken breasts or 1 whole chicken + extra package of thighs, 12 flour tortillas, 1 onion, diced, 1 can diced green chilies and 1 lb. sharp cheddar cheese, grated, this recipe delivers authentic, satisfying flavors. Cook chicken and tear into small strips when cool.
Cut tortillas in small strips.
Mix together the onion and the chilies.
Mix together the soups and evaporated milk.
Grease a 9 x 13 inch pan and spread bottom with a layer of soup mixture, then a layer of chicken, onion and chilies, tortilla strips and cheese; continue ending with cheese.
Sprinkle with paprika and cover with foil.
Bake at 300Β° for 1 hour.
Serves 12-15.
