Tortellini Salad
Tortellini Salad is an impressive dinner. Made with 12 oz. frozen tortellini, 3 tbsp. red wine vinegar, 1 tsp. dried basil, 1 tsp. dijon mustard and 1/4 tsp. salt, this recipe delivers authentic, satisfying flavors. A comforting dish that warms the soul.
Cook tortellini; drain and rinse with cold water.
Cut salami in strips.
Quarter and seed red pepper; cut into thin strips.
In large bowl, mix vinegar, basil, mustard, salt, pepper and garlic. Using a whisk, beat in oil until well blended.
Lightly mix tortellini, parsley, salami, pepper and cheese. Cover; refrigerate for 1 hour.
Serve on lettuce leaves.
Serves 4 to 6.
