Tomato Soup
Tomato Soup is an moderately easy dinner. Made with 1 small onion, chopped, 3 tbsp. butter, 6 large ripe tomatoes, 2 tsp. salt and 1/4 tsp. baking soda, this recipe delivers authentic, satisfying flavors. Simple to make and full of bold, satisfying flavors.
Peel tomatoes; seed and chop.
(Place tomatoes in boiling water for about 1 minute, then place in cold water; skins will come right off.)
Remove seeds and squish tomatoes through your fingers.
(I find this much more entertaining than chopping.) Saute onion in butter about 5 minutes.
Add tomatoes, salt, soda and sage.
Simmer about 15 minutes.
Mix milk and flour and add slowly.
Add cream and heat.
Normally we double this recipe.
