Tomato Pudding
Tomato Pudding is an moderately easy dinner. Made with 1 c. celery, chopped, 1 c. medium onion, chopped, 3 tbsp. butter, 1 heaping tbsp. flour and 2 (1 lb.) cans stewed tomatoes with green pepper, this recipe delivers authentic, satisfying flavors. A crowd-pleaser that never disappoints.
Saute celery and onions in butter to just tender.
Blend in flour; mix well.
Add tomatoes, salt, pepper, sugar and mustard. Stir in 1 1/2 cups of bread crumbs.
Pour into a well-greased 1 1/2-quart casserole and bake for 30 minutes.
Put remaining 1 cup bread cubes on top.
Sprinkle with grated cheese.
Bake for additional 10 minutes.
Serves 6 to 8.
