Tomato-Carrot Soup
Tomato-Carrot Soup is an moderately easy dinner. Made with 1 green onion, chopped, 1 tbsp. olive oil, 1 clove garlic, finely chopped, 1 large carrot, peeled and diced and 1 1/4 lb. plum tomatoes, chopped, this recipe delivers authentic, satisfying flavors. Saute green onion in oil in medium size saucepan over medium heat for 3 minutes. Add garlic.
Saute 2 minutes.
Add carrot, plum tomatoes, chicken broth, basil, salt and pepper.
Bring to boiling. Reduce heat. Simmer, covered, 15 minutes or until carrots are tender.
