Tennessee Jam Cake
Tennessee Jam Cake is an moderately easy dinner. Made with 1 1/2 c. sifted self-rising flour, 1/4 tsp. soda, 1 1/2 tsp. cinnamon, 1 1/2 tsp. allspice and 1/2 c. butter or margarine, this recipe delivers authentic, satisfying flavors. Perfect for family dinners and special occasions.

Heat oven to 350Β° and prepare two 8-inch round or square cake pans.
Sift together flour, soda and spices.
Cream together butter and sugar until light and fluffy.
Beat in eggs 1 at a time.
Fold in flour mixture and buttermilk alternately, making 3 additions.
Stir in preserves, raisins, nuts and jam.
Pour batter into prepared pans.
Bake 30 to 35 minutes.
Frost with Caramel Icing.
This cake is better if allowed to mellow 2 to 3 days.
