Tapenade(An Olive-Based Appetizer Spread from the Sunny South of France.)

Mash the olives in a large bowl (they will look like crushed cockroaches), adding olive oil as necessary to make a thick paste. Chill.

Serve in a shallow glass bowl decorated with parsley. Put the bowl on a tray and surround it with crusty French bread or pita triangles.
