Taco-Filled Peppers
Taco-Filled Peppers is an moderately easy dinner. Made with 1 lb. ground beef, 1 (1 1/4 oz.) pkg. taco seasoning mix, 1/2 c. sour cream, 1 c. salsa and 1 c. kidney beans (8 oz.), rinsed and drained, this recipe delivers authentic, satisfying flavors. A crowd-pleaser that never disappoints.

In large skillet, brown the ground beef; drain.
Stir in the taco seasoning, kidney beans and salsa.
Bring to a boil; reduce heat and simmer for 5 minutes.
Cut peppers in half lengthwise; remove and discard seeds and stems.
Immerse peppers in boiling water for 3 minutes; drain.
Spoon about 1/2 cup meat mixture into each pepper half.
Place in an ungreased 13 x 9 x 2-inch baking dish.
Cover; bake at 350Β° for 15 to 20 minutes, or until peppers are crisp-tender and filling is heated through.
Top each with tomato, cheese and a dollop of sour cream.
