Tabbouleh
Tabbouleh is an moderately easy dinner. Made with 3/4 c. uncooked cracked wheat, 1 1/2 c. chopped parsley, 3 medium tomatoes, chopped, 5 green onions, thinly sliced and 2 tsp. chopped dried mint leaves, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.

Cover cracked wheat with cold water.
Let stand 30 minutes; drain.
Press out as much water as possible.
Place cracked wheat, parsley, tomatoes, onions and mint in a glass/plastic bowl.
Mix remaining ingredients.
Pour over cracked wheat mixture and toss. Cover and refrigerate at least 1 hour.
Garnish with ripe olives if desired.
Serves 6 (175 calories per serving).
