Tabbouleh
Tabbouleh is an moderately easy dinner. Made with 1/2 c. bulgur (wheat), 3 ripe tomatoes, peeled and chopped, 1 c. finely chopped parsley, 1 c. finely chopped green onions and 1/2 c. fresh lemon juice, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.
Pour boiling water over the wheat to cover generously and let sit for 10 minutes.
Pour off excess liquid.
Add tomatoes, parsley and onions; mix well.
Combine lemon juice, salt, oil, mint and pepper.
Pour over the vegetable mixture.
Toss lightly and refrigerate until ready to serve.
