Tabbouleh
Tabbouleh is an moderately easy dinner. Made with 2/3 c. fine bulgur, 3 medium size tomatoes, finely chopped, 3/4 c. finely chopped fresh parsley, 1 medium size onion, finely chopped and 4 tbsp. fresh lemon juice, this recipe delivers authentic, satisfying flavors. A comforting dish that warms the soul.
Place the bulgur (crushed wheat) in bowl and cover with cold water.
Let soak for 10 minutes; then drain.
Wrap bulgur in cheesecloth and squeeze vigorously until dry.
Drop bulgur into a deep bowl; add tomatoes, parsley, onions, lemon juice and salt. Toss gently but thoroughly, mixing together with a fork.
Just before serving, stir in the olive oil and mint.
Taste for seasoning.
