Swiss Potato Casserole
Swiss Potato Casserole is an moderately easy dinner. Made with 6 lb. potatoes, 2 (4 oz.) jars chopped pimientos, 1 c. salad olives, chopped (optional), 2 bunches green onions, chopped and 12 slices swiss cheese, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.
Cook potatoes until done; peel and cut in chunks.
Add pimientos, olives, green onions, 8 slices cheese (cut in cubes) and mayonnaise.
Season with salt and pepper.
Place in oblong 2-quart casserole.
