Swenson's Potato Cake
Swenson'S Potato Cake is an impressive dinner. Made with 2 c. sugar, 3/4 c. butter or shortening, 4 eggs, beaten separately, 1 c. milk and 2 1/2 c. flour, this recipe delivers authentic, satisfying flavors. A classic recipe that has been enjoyed for generations.

Cream sugar and oil; add egg yolks, then potatoes.
Mix all dry ingredients separately, sifted together 3 or 4 times.
Add alternately the dry ingredients and milk to creamed mixture.
Add vanilla and nuts.
Fold in beaten egg whites last.
Bake at 350Β° until done, approximately 1/2 hour or so.
