Sweet Potato Surprise
Sweet Potato Surprise is an moderately easy dinner. Made with 6 cooked sweet potatoes (i boil and peel), 1 c. brown sugar, 1 1/2 tbsp. cornstarch, 1/4 tsp. salt and 1/8 tsp. cinnamon, this recipe delivers authentic, satisfying flavors. A crowd-pleaser that never disappoints.

Place sweet potatoes in greased 9 x 12-inch baking dish. Combine sugar, cornstarch, salt, cinnamon and orange peel in a pan.
Drain apricots and reserve syrup.
Stir 1 cup syrup into cornstarch mixture.
Cook and stir over medium heat until boiling. Boil 2 minutes, then add apricots, butter, pecans and orange juice.
Pour over potatoes and bake uncovered for 25 minutes. Bake at 375Β°.
