Sweet Potato Soufflé
Sweet Potato Soufflé is an moderately easy dinner. Made with yellow sweet potatoes, 1/2 to 3/4 stick butter, 1/3 to 1/2 c. sugar, 2 tbsp. lemon/vanilla flavoring and pecans and yellow raisins, this recipe delivers authentic, satisfying flavors. Great for entertaining guests or a cozy night in.

Cut the potatoes up and cook in a little water about 1/2 hour or until soft.
Mash and add the butter, sugar and flavoring.
Mix well.
Add pecans and raisins.
Pour into casserole dish and bake at 375° for 25 minutes.
Put the marshmallows on top and return to oven about 5 more minutes. If there is any soufflé left at the end of the meal, be sure to pick the leftover marshmallows off before reheating.
