Sweet Potato Pie
Sweet Potato Pie is an moderately easy dinner. Made with 3 to 4 large sweet potatoes, 1/2 c. soft butter, 2 c. sugar, 4 eggs and 1/2 tsp. nutmeg, this recipe delivers authentic, satisfying flavors. Bursting with flavor in every bite.

Cook sweet potatoes in boiling water until fork easily pierces potatoes.
Cool slightly; remove skins and place into large mixing bowl.
Mix with mixer until smooth.
Stir in butter and sugar. Beat in eggs one at a time.
Mix in nutmeg, salt and evaporated milk.
Pour into unbaked pie shells.
Place on cookie sheet and bake at 425° for 20 minutes.
Lower heat to 325° and bake 30 to 45 minutes longer or until knife inserted in comes out clean.
