Sweet Potato Balls
Sweet Potato Balls is an moderately easy dinner. Made with 20 large marshmallows, 2 (29 oz.) cans sweet potatoes, 1/2 c. butter, melted, 2 egg yolks, beaten and dash of salt, this recipe delivers authentic, satisfying flavors. A comforting dish that warms the soul.
Drain and mash sweet potatoes; add 1/4 cup melted butter, egg yolks and salt.
Mix and divide into 20 portions. Wrap each portion around a marshmallow.
Add 1/4 cup melted butter to cornflake crumbs and rol leach portion in crumbs.
Place in an 8 x 11-inch baking dish and bake in a 350Β° oven about 20 minutes or until heated through.
