Sweet Pickle Relish
Sweet Pickle Relish is an moderately easy dinner. Made with 1 qt. chopped cucumbers (approximately 4 medium), 2 c. chopped onions (approximately 2 medium), 1 c. chopped sweet green pepper, 1 c. chopped sweet red pepper and 1/4 c. salt, this recipe delivers authentic, satisfying flavors. Combine first 4 ingredients in a large bowl; sprinkle with salt and cover with cold water.
Let stand 2 hours or more; drain, rinse and drain thoroughly.
Combine sugar, vinegar and spices in large saucepot.
Bring to a boil.
Add the drained vegetables; simmer for 10 minutes.
Pack hot relish into hot jars, leaving 1/4-inch headspace.
Adjust caps and seal.
Makes approximately 8 half pints.
