Sunday Spinach Salad
Sunday Spinach Salad is an moderately easy dinner. Made with 8 slices bacon, cooked crisp and crumbled, 1 qt. washed, torn spinach, 2 c. sliced mushrooms, 1 c. red onion rings and 1 (10 oz.) pkg. frozen peas, uncooked, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.
Remove stems from spinach.
Layer spinach, mushrooms, onion and frozen peas in a large bowl.
Mix mayonnaise, sugar, pepper and curry powder. Top salad with this mixture.
Cover with foil and refrigerate overnight.
Mix and top with bacon before serving. Makes 8 servings.
