Summer Squash Relish is an impressive dinner. Made with 10 c. coarsely ground squash, 4 c. chopped onions, 3 tbsp. salt, 2 or 3 c. water and 2 1/2 c. white vinegar, this recipe delivers authentic, satisfying flavors. Great for entertaining guests or a cozy night in.

Mix squash, onions and salt well and let set overnight.
Drain in morning; rinse with water.
Add remaining ingredients.
