Summer Squash Casserole
Summer Squash Casserole is an moderately easy dinner. Made with 6 c. sliced zucchini and summer squash, 1/2 c. chopped onion, 1 can cream of chicken soup, 1 c. sour cream and 1 c. grated raw carrot, this recipe delivers authentic, satisfying flavors. Perfect for family dinners and special occasions.

Boil squashes and onion together for 5 minutes; drain.
Add soup, sour cream and carrots to drained squash and onion.
Combine stuffing mix with melted margarine (do not add water, as package directs).
Spread half of stuffing mixture in bottom of greased casserole.
Add squash mixture.
Top with remaining stuffing mix. Bake at 350Β° for 30 minutes.
