Summer Squash Casserole
Summer Squash Casserole is an moderately easy dinner. Made with 6 c. sliced yellow squash, 1 medium onion, 1/2 c. margarine, divided, approximately 15 to 16 saltine crackers, crushed and divided (2 squares each) and 2 eggs, this recipe delivers authentic, satisfying flavors. Cook squash and onion in salted water until tender.
Drain well. Add margarine (reserving 2 tablespoons to dot top).
Mash until smooth.
Add 2/3 of crackers, eggs, milk, sugar, salt and pepper and mix well.
Add cheese.
