Summer Squash Bake
Summer Squash Bake is an moderately easy dinner. Made with 2 lb. fresh squash, 5 tbsp. butter, 2 eggs, 1/3 c. milk and 1 small can chopped green chilies, this recipe delivers authentic, satisfying flavors. Great for entertaining guests or a cozy night in.

Wash and cut up the squash.
Dice the onion and add to squash. Cook all in boiling salted water.
Drain and mash with potato masher.
Add about 3 tablespoons butter with salt and pepper to taste.
Beat eggs.
Stir a little hot squash into eggs before gradually adding eggs to squash.
Mix in flour, milk and last 2 tablespoons butter.
