Summer Soup
Summer Soup is an moderately easy dinner. Made with 1 1/2 pt. green butter beans, 1/2 lb. streak of lean salt pork, 4 ears fresh corn (about 1 1/2 pt.), 1/2 pt. sliced okra and 3 to 4 medium tomatoes, peeled and chopped, this recipe delivers authentic, satisfying flavors. Great for entertaining guests or a cozy night in.
Cut pork into slices (1/4-inch thick).
Cook pork in about 2 quarts of water about 45 minutes. Add all ingredients except corn and cook until beans are almost done.
Add fresh cut corn and if desired, small corn meal dumplings (size of a fifty cent piece). Cook about 20 minutes more.
Delicious!
Serve in shallow bowls.
