Sullivan's Island Shrimp
Sullivan'S Island Shrimp is an impressive dinner. Made with 1 lb. sliced bacon, chopped, 1/4 lb. butter, 2 c. chopped onions, 2 c. chopped celery and 2 (no. 2 1/2) cans tomatoes, this recipe delivers authentic, satisfying flavors. A comforting dish that warms the soul.

Cook bacon in frying pan until crisp; remove.
Add butter, onion and celery to grease in pan; saute until tender.
Transfer bacon and this mixture to large pot.
Add remaining ingredients (except shrimp, cracker crumbs and sherry); cook slowly for 2 hours, until mixture thickens.
Add raw shrimp; cook until shrimp are done.
Add cracker crumbs and sherry; serve with fluffy rice. Serves 16.
