Stuffed Zucchini
Stuffed Zucchini is an moderately easy dinner. Made with 1 lb. browned ground beef, salt and pepper to taste, 1 (12-inch) zucchini, hollowed out and cut lengthwise, 1 beaten egg and 1/2 c. bread crumbs, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.

Cut zucchini in half lengthwise, dig out pulp and saute it with ground beef, onion and green pepper.
Put mixture into bowl with egg, bread crumbs
Parmesan cheese.
Blend together. Put into zucchini shells.
Put spaghetti sauce in bottom of 9 x 13-inch zucchini
Bake 30 minutes at 350Β°. Put Mozzarella cheese on top of squash a few minutes before finished baking.
Serve with spaghetti noodles or rice.
