Stuffed Zucchini
Stuffed Zucchini is an moderately easy dinner. Made with 1 medium (8 to 10-inch) zucchini, 1 tbsp. corn oil, 1 lb. ground beef, 1 small onion, chopped and 2 tbsp. chopped parsley or 2 tsp. dried, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.

Zucchini lengthwise; all of center pulp and seeds.
Chop and put aside.
Saute beef and onion in oil; drain fat. Add rest of ingredients except margarine and cheese. Mix in pulp; pile into scooped out centers.
Top with margarine and cheese.
Bake at until tender (about 1 hour).
