Stuffed Zucchini
Stuffed Zucchini is an moderately easy dinner. Made with 4 to 5 zucchini, 1 c. bread crumbs, 1 c. shredded cheese, 1/2 c. chopped onion and 2 eggs (uncooked), this recipe delivers authentic, satisfying flavors. Perfect for family dinners and special occasions.
Parboil the zucchini.
Cut each zucchini in half lengthwise. Scoop out seeds and discard.
Scoop out zucchini meat and dice. Mix zucchini with bread crumbs, shredded cheese, onion and eggs. Season to taste with salt and pepper.
Stuff zucchini shells with this mixture.
Top with shredded cheese or Parmesan cheese.
Bake at 350Β° for 1/2 hour, until golden brown on top.
