Stuffed Zucchini
Stuffed Zucchini is an moderately easy dinner. Made with 4 medium zucchini, 1 c. shredded cheese (your choice), 1 egg, beaten, 1 c. rice (already cooked) and 2 tbsp. chopped onion, this recipe delivers authentic, satisfying flavors. Perfect for family dinners and special occasions.

Parboil zucchini about 7 minutes.
Cut in half.
Scoop out pulp.
Chop pulp.
Mix with cheese (reserving 1/2 cup), eggs, rice, onion, bread crumbs and salt.
Stuff shells with mixture. Sprinkle with bacon.
Bake in greased baking dish at 350Β° for 20 to 25 minutes.
Top with cheese the last few minutes of baking.
