Stuffed Zucchini
Stuffed Zucchini is an moderately easy dinner. Made with 1/2 c. chopped onion, 1 medium garlic, minced, 1 tbsp. oleo, 1 can tomato soup and 1/2 lb. hamburger, this recipe delivers authentic, satisfying flavors. A classic recipe that has been enjoyed for generations.
Cook onion, garlic and oregano in oleo until tender; stir in soup.
Cut zucchini lengthwise, scoop out pulp and seed, leaving 1/4-inch shell.
Chop pulp and seeds.
Brown meat, add 1/4 cup sauce, pulp, bread crumbs and salt.
Spoon into shell and put in baking dish.
Pour on remaining sauce.
Cover, bake at 350Β° for 40 minutes.
Uncover.
Top with cheese.
