Stuffed Squash
Stuffed Squash is an moderately easy dinner. Made with 3 to 4 large yellow squash, 4 large potatoes, 12 oz. mozzarella cheese, 1 lb. hot turkey sausage (uprop's has this) and dash of black pepper, this recipe delivers authentic, satisfying flavors. Bursting with flavor in every bite.

Cut squash in half lengthwise.
Boil until able to pierce easily with fork.
Hollow out seeds and set aside.
Cut potatoes into small cubes, about size of croutons.
Cook in pan sprayed with non-stick cooking spray.
(Small amounts of water may need to be added during cooking.)
Cook sausage; mash and drain off fat.
