Stuffed Pumpkin
Stuffed Pumpkin is an moderately easy dinner. Made with 1 medium-sized pumpkin (seeds removed; save top and stem), 1 chopped onion, 1 lb. ground beef, 1 c. bread cubes and 2 slices bacon, this recipe delivers authentic, satisfying flavors. A classic recipe that has been enjoyed for generations.
Heat oven to 325Β°.
Brown onions in pan; add ground beef, salt and pepper until cooked.
Add bread cubes and stir.
Place ground beef mixture inside pumpkin.
Place top back on pumpkin.
Drape 2 slices of bacon over top and hold in place with toothpicks, if necessary.
Cover with aluminum foil and place pumpkin in ovensafe pan.
Cover bottom with water and cook in oven until pumpkin is tender.
Makes a great autumn decorative meal.
