Stuffed Potatoes
Stuffed Potatoes is an easy dinner. Made with 6 large baking potatoes, 1 pt. sour cream, 2 c. cheddar cheese, small bunch of chopped spring onions and 1 stick melted butter, this recipe delivers authentic, satisfying flavors. Great for entertaining guests or a cozy night in.
Bake potatoes until done.
While still hot, cut in half lengthwise and scoop out potato, leaving skins intact.
Mix potato with butter, sour cream, 1 1/2 cups of the cheese and onions.
If necessary, thin with more sour cream.
Add salt and pepper to taste.
Place mixture back in skins.
Top with remaining cheese and reheat until cheese melts.
