Stuffed Pepper Pie
Stuffed Pepper Pie is an moderately easy dinner. Made with 2 qt. water, 3 medium green bell peppers, halved and seeded, 1/4 c. finely chopped onion, 1 c. water and 2 tbsp. margarine or butter, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.

In large saucepan, bring 2 quarts water to rolling boil.
Place peppers in boiling water and cook for 15 minutes.
Drain; arrange, cut side up, around bottom of ungreased pie pan.
Heat oven to 350°.
In same saucepan, combine 1 cup water and margarine.
Heat to boiling.
Remove from heat; stir in potato flakes, milk and egg. Mix well.
Stir in sausage; spoon into pepper lined pan.
Arrange tomato wedges on top.
Sprinkle with cheese and bake at 350° for 15 to 20 minutes.
Serves 6.
