Stuffed Manicotti
Stuffed Manicotti is an moderately easy dinner. Made with 12 uncooked manicotti shells, 15 oz. cottage cheese, 8 oz. shredded mozzarella cheese, 1 egg plus 1 egg white and 1/4 c. plus 2 tbsp. grated parmesan cheese, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.
Cook manicotti.
Drain and place in bowl of cold water; set aside.
Set oven at 350Β°.
In medium bowl, combine cottage cheese, 1 1/2 cups Mozzarella cheese, egg and egg white, 1/4 cup Parmesan cheese, parsley, oregano, garlic powder, salt and pepper.
Drain manicotti.
Pat dry with a paper towel.
Fill shells with the cheese spread.
Put 1/2 cup spaghetti sauce over bottom of 3-quart baking dish.
Arrange filled manicotti on sauce. Cover with remaining sauce.
Sprinkle remaining cheeses.
Cover dish loosely with foil.
Bake 40 minutes until hot and bubbly.
